Khichdi is a simple and delicious dish that can be easily prepared at home. Here's a basic recipe for making khichdi:


Ingredients:

- 1 cup basmati rice

- 1/2 cup yellow split moong dal (lentils)

- 1 tablespoon ghee (clarified butter) or oil

- 1 teaspoon cumin seeds

- 1 small onion, finely chopped

- 1 small tomato, chopped

- 1-inch piece of ginger, grated

- 2-3 cloves of garlic, minced (optional)

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon cumin powder

- 1/2 teaspoon coriander powder

- Salt to taste

- 4 cups water

- Fresh cilantro leaves for garnishing


Instructions:

1. Rinse the rice and lentils separately under running water until the water runs clear. Soak them in water separately for about 30 minutes, then drain.

2. Heat ghee or oil in a pressure cooker or a large pot. Add cumin seeds and let them sizzle for a few seconds until they release their aroma.

3. Add chopped onions and sauté until they turn golden brown. Then, add grated ginger and minced garlic (if using) and sauté for another minute.

4. Add chopped tomatoes and cook until they become soft and mushy.

5. Add turmeric powder, cumin powder, coriander powder, and salt. Stir well to combine the spices with the onion-tomato mixture.

6. Add drained rice and lentils to the pot and mix everything together. Cook for a minute or two, stirring occasionally.

7. Pour in water and give it a good stir. Adjust the salt if needed.

8. If using a pressure cooker, cover it with the lid and cook on medium heat for about 3-4 whistles. If using a pot, cover it with a lid and simmer on low heat for about 20-25 minutes or until the rice and lentils are fully cooked and soft.

9. Once the pressure releases naturally or if using a pot, remove the lid and gently fluff the khichdi with a fork. You can adjust the consistency by adding more water if you prefer it thinner.

10. Serve hot khichdi in bowls, garnished with fresh cilantro leaves. It can be enjoyed on its own or with a side of yogurt, pickle, or papadum.
